Been a long time since I’ve been in Rome and idk where we ate but I did some
research for you in Italian to try to avoid touristy stuff. Seems like people like Betto e Mary, Trattoria Vecchia Roma, Dino e Toni, and Lo Scopettaro.

Also, lots of places in Rome will serve food from all over Italy but you are better off sticking to regional dishes (pizza is the exception to this rule). For example you wouldn’t order Pesto alla Genovese in Rome. Some regional specialties are carbonara, cacio e pepe, amatriciana, and gricia.
