How about a big food truck tailgate rally in the west parking lot across the street before the game? I still think this is a good idea. Provo already has a very successful food truck rally downtown every week. I am sure they would love the chance to market their food at the stadium. They would probably pay a good fee or percentage to athletics also. If it was all day before the games, I think it would become a destination. I really don't feel it would affect in stadium sales during the game all that much. Once the game starts, the trucks would be done. Even a big screen showing game highlights would be cool. Set them up in a corner of the lot, put out a few garbage cans and picnic tables and you would have the first viable start to a real tailgating tradition at LES.
