When our starting offensive lineup includes:

Christian Stewart (QB) - 4th string, walk-on, JC transfer
Paul Lasike (FB) - former rugby player
Nate Carter (RB) - 4th string, walk-on, JC transfer
Mitchell Juerrgens - walk-on (for Houk - who missed the UCF game and only had 3 plays against Nevada and fumbled on one of them)
Colby Pearson - walk-on (for Blackmon)

with a defense that has no outside LBs so they had to move Kaufusi and Alisa from other positions there and we lost the only senior outside LB that we had with any talent or any experience in that position. We were down two starting DBs (both seniors) and replaced both with second year players (one a converted WR).

Yes, that is a team that would struggle in the middle of the MWC this year - though your idea that Nevada is a middle of the pack MWC team is wrong since they are right up there with CSU and BSU this year and ahead of everyone else.
