you would either have to argue that USU is better than he is stating by either proving BYU is not just playing crappy ball and is still a great team or by proving the USU has shown enough against other teams to be able to say they are a great team in their own right.

Using beating BYU as a reason for disagreeing with his premise doesn't do anything for your argument because his assumption that BYU currently sucks is his primary argument.
