If she doesn't have liability insurance, here are your options:
(1) File a lawsuit against her and go after her personal assets. However, if she doesn't have liability insurance, she probably doesn't have any money so this will most likely be a wasted effort.

(2) Make a claim under your collision coverage to get your vehicle repaired. You will have to pay for deductible and that sucks but you don't really have any other choice. You might be able to recover your deductible from the at-fault driver via small claims. Usually, even an indigent person can find a way to come up with $500. Then, if you have a bodily injury claim, make that claim under your UM coverage. Also, if you have incurred medical expenses and you have Medical Payments coverage under your auto policy, make a claim for payment to you directly of 100% of the full amount of all medical bills. Do not let your auto insurer reduce the the medical bills and do not let them pay any portion of the Medical Payments coverage directly to the providers. Make them pay you directly for 100% of the full amounts billed, even if your health insurance already aid the bills. Keep in mind that if you make a Med Pay and a UM claim, the Med Pay amounts may offset any UM claim.
