My boss used to have a family honey business, interesting stuff.
He would rent out his bees for pollination in the spring and then drive them up to northern Montana for the summer to make honey from the wildflowers in high mountain meadows.

The interesting thing is that he always got a good price for his honey because the color was very light, and most of the other honey purchased by the big companies were various darker colors, so they mixed in his light-colored honey to get a consistent color to sell in the stores.
