I spent many sleepless nights at first fidgeting with my WSM
on overnight cooks.
It seemed the temp would go too low, so I would adjust the vents, only to later wake up to the temp being too high.
I then bought my Maverick wireless thermometer to alert me when the temperature got out of range, and eventually I got decently good at controlling the temperature.
Since then I went the lazy man's way and bought a BBQ Guru which I love.
