We have a protein - usually chicken, fish, or lean beef.
And a fibrous green veggie - usually asparagus, broccoli, brussel sprouts
And a slow-digesting carb - usually sweet potato, quinoa, brown rice
Sure it's boring, and my kids pretty much hate me for it, but it's healthy, easy to plan, and easy to cook.
Also, it makes burger or pizza night that much more exciting.
