I'm with you on building dishes around a main ingredient.
For example, fish on Friday. Last week was battered walleye. Before that, grilled salmon. This week, fish tacos. This narrows down my choices so I'm not totally overwhelmed by possibilities.

And it helps when grocery shopping. I tend to buy whatever has a good price. So I don't think I could plan out a precise menu for every day. But the variability in food availability forces me to experiment with new dishes.
