Didn't ask because I had forgotten about it.
But, I think I can tell a story, which, in my opinion, would be consistent with observations.

The ownership group that bought the restaurant from the Heaps family consisted of three individuals, two of them related. In a meeting one time discussing cost saving measures, one of the owners suggested that they consider replacing cream with whole milk in making their Alfredo--and that owner was dead serious. From what I heard, they didn't actually do it at that time.

A couple of things stood out to me on that. One, you don't take an institution with such a strong brand and start messing with the core products of that brand. Secondly, if you think you can replace cream with whole milk in making Alfredo, then you're ignorant at best and have no business being in the restaurant business.

Anyway, after some ownership intrigue that ended up in court, and a subsequent settlement, the one non-related owner left, and most people I've talked to about Brick Oven say that the quality has really gone downhill since.
