to do at all of the parks depending on your interests. Epcot is good if you like the World Showcase. You visit mini versions of different countries where they have food, activities, souvenirs, and shows from those countries. Its fun to experience a little of the culture of each and you can spend the entire day just in World Showcase. If all your kids are interested in is fast fun rides then you can skip it because they will probably be bored. Hollywood Studios has rockin roller coaster, tower of terror, and star tours. If you have smaller kids that are into shows they have the disney jr. shows and beauty and the beast type theatrical shows. If your kids get bored with stuff like that then you really only have the 3 bigger rides. Animal Kingdom has a safari which is neat but its about like a trip to the zoo. Expedition Everest is fun and then there are shows. If you want big fun rides then Magic Kingdom is probably your best bet, but if your kids are good with shows and exploring a bit the other parks do have value. If you need more info let me know.
