And I completely agree with your instructor - there's no use listing any higher temps. If you want to eat shoe leather you won't be doing it in my kitchen.
Also, ignore the Internet. 160 for medium?! That's asinine.
Sounds like your instructor's temps are a bit lower than mine. I'll have to try his temps out and see if I like it. Thanks for posting.
