Yeah, that's what I was worried about, but I haven't had good results when I pack too much meat in the smoker. For whatever reason, there seems to be more hot/cold spots and the results aren't as good. It's honestly a work in progress. I'm trying new things every time. I'll have three dry rub flavors for tomorrow's dinner.
