Get the skirt steak. Base it in oil and season it with steak seasoning both sides

Smoke it for 1hr low smoke

Quickly sear it over hot fire on the grill for less than a min on each side

Let rest less 5-10 min

Cut thin against the grain

Best steak taco ever! Or just eat it as normal steak
