You can put it straight on the grill though. I felt like I’ve got better results smoking and then searing than I have straight on the grill.

Yes smoke. 225 for like 90 min until it’s about 120, then sear it with butter

Sear it 2.5 minutes per side then roast it at 400 for 10 minutes per pound.
