The LDS church accurately counts baptized individuals as members.
Also, you aren't looking at all the sources.
The Church as a source is counting who is technically a member. The number you are going with is how do adults self-identify at a given point in time, which is a much more fluid number.
If you dig a little more, you'll find that what I've said is true--55% is the lowest number reported, and other valid sources, including the Church itself, report a higher number.
All sources agree on some points--such as the fact that SLC is between 48-50% LDS.
