Regardless, the types of wheat are different and the bread is very different.
If you haven't read or watched any of Michael Pollen's stuff, you should. It's really eye opening to what Amercia has done to food.
I wouldn't believe it either if I haven't experienced the difference. Food in Europe is so much better.
Edit: a quick Google search gave me the results that you mentioned about Wheat, but there are other ingredients that are. I don't have good answers here, but I know what I experienced. On a different topic, at this point I don't trust everything the government tells me anymore anyway, but that's a whole other can of worms.
