I'm simply stating that the OP drew MANY conclusions and the only evidence presented was one day of practice. Furthermore, it was incomplete. Defense left the field quick, but maybe they reconvened in a film room, maybe they met earlier in the day, maybe they'd already spent more time meeting than the offense. And nothing that the OP pointed out actually suggested the defense was disorganized.
If we want to base conclusions on one practice, here's mine: last summer I was invited to attend a closed practice during fall camp. On this particular day Mangum completed every single pass in the final 11 v 11 drills, and defense stayed and practiced much longer than any other group except the kickers. Based on my one day observations, one would think we had a dominant team last year...
