Have them mow the lawn until she returns from vacation

and then give her an invoice for all the work outstanding along with a notice that the boys cannot perform any additional work until the invoice is paid. I would be as nice as you can about it because she is your neighbor IMO. If she never pays it I would likely pay my boys the money and have them move on to mowing others lawns.
