I can see that it would be even better.
I sliced up the flat to serve at dinner (and it was plenty), but left the point wrapped up in foil. The wife of one of my elders had surgery this week, so I decided to sliced some of the point up and take him a plate, and that was amazing. I just assumed it was because it was the point, and maybe that's part of it, but perhaps it was letting it rest for awhile too.

BTW, that elder is a Ute fan, but a great guy (and a good dad). Definitely a guy I would invite to a BBQ.
