I would say that I have more success hot and fast vs low and slow.
I don't know if it is the repeatable process, shorter time frame for things to go awry or what. The one thing I'm going to test is foil vs butcher paper.

mine usually takes about 14-15 hours on the smoker, then rest for an hour. i
