I have several friends who have Celiacs, and I've made dinner for them
I didn't really have to do very many weird things or go to a lot of effort, it just took planning. After having my daughter's friend with Celiacs with us up at vacation condo for several days, my wife suggested we ought to put together a cookbook of "normal" GF meals. I don't know that I want to put that much effort into it, but I might put some stuff out on Google Drive and share that. I can come up with about 15 or so meals off the top of my head that I do regularly that are either already GF or easily tweaked to be so. For example, gravy with corn starch instead of flour for thickening. That's an easy switch and no real quality loss.
