If you go Ribeye, you'll pay around 10$ a lb for a good steak. If you go fillet
I actually suggest getting a full beef tenderloin and cutting your own fillets; you'll save some money, and you can determine how thick you want them. there are plenty of videos around showing how to do this.

My personal favorite is a boneless Ribeye, cooked med-rare.

As far as beef quality, go Choice for steaks IMO - I can't tell the difference on homecooked steaks between Prime and Choice.
