I agree with Jim Gaffigan that ketchup is the king of condiments
It has been around for hundreds of years without improvement. There are no varieties or special flavors of ketchup.

I like pretty much any mustard.

I love horse radish.

I don't do mayo, miracle whip, etc.

For Mexican food, I love tapatio. That is all I add to tacos. Salsa is for chips.

For Vietnamese, sriracha.
