You can always golf. There are a vast array of mediocre over-priced golf courses.
As far as eating:
Don't waste your time at Gatlins. Go to Killens. For Mexican, don't waste your time at Pappasito's (although I like Pappasito's, it's above-average Tex Mex). Go to El Tiempo. For Steak, give Pappas Bros. a shot. I also like Flemings, although you can go to Flemings in any major city. Vic and Anthony's has a great reputation for steak, although I'm not sure it's deserved since Landry's bought it.
If you're downtown and want some unique Tex Mex, try Irma's or Irma's Southwest. For the lemonade if nothing else.
If you like Thai, try Thai Gourmet on Richmond. Solid.
If you're downtown and need a unique bite, try Bombay pizza. It's an indian-pizza fusion joint. Some pies are amazing; others not so much, but it's definitely unique.
Otherwise, you may want to plan something in San Antonio or Dallas.
