When they get a little restless find a fast food joint with a playground.

On some of our long trips we will stop for a 30 minute ice cream break at McDonalds primarily so they can run around for a bit. My only other suggestion would be kid friendly apps on your tablet or smart phone. Driving at night has never worked for my kids. They are out of their normal routine so they will stay up and it makes the driving experience terrible.
