If you go highway 40 then do what you can to get to Steamboat. It's an
incredibly beautiful town and awesome drive. You're likely to still see plenty snow at 7,000 feet and higher but the lower parts will be pretty on your way. If you go I-70 then I suggest Glenwood springs, another beautiful town with a stunning drive, probably my favorite drive I've been on.
