A couple reasons:
1. I've probably helped with 50+ moves, and have never had anyone help me move. I figure that I'm owed some help the next time I move (at least from the people that I've helped), even though I could afford to pay movers to do it. What I dislike is when a family is moving out of my ward and they ask for help even though they have never helped anyone else move.

2. Elder's quorum is partly a service organization. I like the idea of sharing one another's burdens that they may be light. You help me, I'll help you, and we'll build a stronger sense of community within our ward. I honestly feel like serving others benefits me, and I don't care how wealthy the people are that I'm helping.
