The value of the Bean Museum goes far beyond what visitors see on display.
It's primarily a research museum and houses one of the largest collections of animal and plants in the west that are used in research not just at BYU but at many other institutes in the region (it isn't uncommon for people from other universities to come and use specimens or for the museum to lend specimens to other institutes). So yeah, the taxidermy stuff might be weird or "gross" but the museum itself is super valuable.
