Mole is southern Mexico. I've only eaten mole dishes a couple of times and

am not particularly fond of it. Chile is at the heart of northern Mexican food and is what you see in Arizona and New Mexico. For me, good chile is the heart of good Mexican food. I like Baja Mexican food but prefer chile. I haven't found any restaurant in Utah that really does chile well.
