I'd say it's authentic if it's a traditional recipe from any region in Mexico.
The stuff sold at Cafe Rio, while good (though not as good lately), is not something you'd find in Mexico.

There are also cases where the dish name is authentic, but the way is prepared is not — like huevos rancheros basically everywhere I've tried them in the US. Taco Bell is a major offender here.

Off the top of my head, these are examples of authentic Mexican food:
-Mole
-Chilaquiles
-Gorditas/huaraches/tlacoyos/panuchos
-Enchiladas (many types)
-Huevos rancheros
-Carnitas
-Tlayudas
-Tinga
-Birria
-Cochinita Pibil
-Tamales (corn husk or banana leaf)
-Mixiotes
-Pozole
