It doesn’t sound like you understand how reps make you better.
No matter how good or bad this team they’re playing is, Zach Wilson is a 19 year old true freshman kid playing in i believe his 5th game. He probably hasn’t seen some blitzes MNSU will attempt or maybe a pre snap look is new to him in this game. Lets say those things just won’t happen and NMSU doesn’t do anything any different.

1) He gets time to practice new RPO version of Grimes offense instilled vs BSU and run well with no penalties vs UMASS. Reps in general make you better whether it’s just you and a WR pitching and throwing, 7 on 7 or in a D1 College football game.
2) Better chemistry and confidence with depth starters and 2/3 deep at WR.
3) Build a winning/dominant culture and mindset in him from early in career and having him understand that we don’t lose to those types of teams. And by those types of teams that includes all G5 and historically struggling P5 teams.
4) This game allows coaches to run similar versions of what they want to do against Utah and gauge player execution and situational football.

It’s like a physical scrimmage. Any success that Zach Wilson can have now will be valuable for him in the future. Also if he has failures like throwing picks or throwing too high or behind receivers will give him more film and things to work on.
