You can use the Gunk engine degreaser but that leaves a pretty strong smell. I prefer Simple Green
Just spray it on the engine and give it a few minutes. You can use a scrub brush on any thick deposits, then wash it off. Works great.
I do it in a coin-op wash bay and just be smart about using full pressure around any electronics.

I don't. Never had an issue. I try to keep full pressure spray away from the fuse box.
