I took a class on Islam for an elective and met some of them. Those I spoke to said they wanted to attend BYU for much the same reasons any other students want to attend BYU - a religious atmosphere, where most are devout members of their faith, and an emphasis on modesty and cleanliness. The lack of alcohol on campus is especially appealing to the Muslim students (and their parents).
