I really enjoyed driving around England on our trip
We stayed in London for a few days then got a car and hit Windsor, Avebury and Stonehenge (the former is less known but pretty neat and in the middle of nowhere), Bath, the Cotswolds, and Oxford. I enjoyed everything about it from driving on the wrong side of the road to driving on country roads with beautiful countryside.

After England, we went to Italy and used trains to travel between cities. We only hit big ones for the most part (Venice, Florence, Rome, Pompei, amalfi coast —Sorrento and Capri). We did make one stop at the Lamborghini museum which is in the middle of nowhere outside of Bologna. My favorite city in Italy was Florence but I really enjoyed Capri as well as our most relaxing day of our trip.

That’s the brunt of my experience traveling with full family. I also like Paris but can’t speak for any countryside.
