My guess is that they planned the whole season in advance
with an entire script for the whole season rather than merely producing one script for one episode at a time.
They wouldn't have written and shot episode three before writing episode 4.
I remember not seeing how many were killed at Winterfell and wondering when we'd learn how many were left. Finally, the 50% number was thrown out there so we would know.
