From your original post I assume you appreciate subltelty of taste and variety of flavor
to simply a hunk of red meat. Ordering everything rare goes directly against that. To experience the full flavor of a steak, different pieces of meat should be cooked differently. How are you going to appreciate the char, juice, and flavor of a high-quality marbled rib eye if the fat doesn't even get a chance to render?
