It’s just as reasonable for USC to rebound as it is for BYU to have a turnaround year. Why does everyone pick the USC game as the early one that BYU is going to win?

USC has better athletes at literally every position, sometimes two or three players deep. Their coaching is suspect, but so is BYU’s. At best, I think coaching cancels out (and at worst, I think Sitake & Co. get exposed). Even then, USC’s players will probably beat BYU man for man.
