Tritip is an amazing cut. It doesn’t have a lot of exterior fat or
Large veins of fat BUT it has a lot Interior marbling which makes it great to smoke/grill. I treat it like a steak through, initial sear for a couple minutes each side then 250ish degrees to slowly bring it up to medium rare. So not really roasting or traditionally smoking it. A roasted chuck roast or high fat roast turns out well on the smoker roasting it like you would a roast in the oven.
