You’re remembering cases like OSU's backup SENIOR QB lighting us up:
I'm referring to freshman or sophomore inexperienced QB's. Here is a list of QB's who ended up being pretty good that struggled against Bronco's D:

Reggie Ball Ga Tech 2003, Freshman ALL-WORLD recruit
Matt Leinart USC 2003
Trent Edwards Stanford 2003, Freshman #1 QB recruit in the country, ended up #9 all time in passing yards for Stanford, drafted in 3rd round
Brady Quinn ND 2003 & 2004, Freshman & Sophomore years, ended up #4 all time passing leader at ND, 1st round draft pick
Jake Locker UW 2008, Sophomore season
Austyn Carta-Samuels WY 2009, Wyoming's prize recruit freshman...ended up doing well at WYO and transferred to Vanderbilt and started there
Josh Rosen UCLA 2015, Freshman year

Just to name a few....go back and look at the stats at those games, they all had dismal performances vs. Bronco's D as young QB's. They would struggle to recognize where the pressure was coming from in Bronco's scheme and he blitzed the tar out of them.
