Perhaps, and work with me here, you should find someone to cook the turkey who won't over cook it.
I've had prime rib cooked for Christmas that might as well have been a pot roast because of the way it was treated. Prime Rib should always be amazing. So much about how good a meal is depends on how well it is cooked. Then the recipe for things like stuffing comes into play.
I suspect you are trapped in a bottled gravy, stovetop box stuffing, overcooked turkey world. That is sad.
