I use a subscription service that notifies me of cheap flights (flightsfromhome.com). I flew from Salt Lake to Kauai for
$800 round trip. That's 2 tickets plus a baggage fee because the tickets we got didn't include even a carry-on. Only a "personal item/backpack" that would fit under the seat in front of you.
We went over the Thanksgiving Holiday, so it was a prime time.
We rented a condo via HomeAway/VRBO. It was $1500 for the week, but we could see/hear the ocean from the unit. It didn't have A/C but it did have a full kitchen so breakfast/lunch every day we made our own. We went to Costco and Safeway and got food when we got there to cover that.
It's not cheap, but if you take advantage of ways to make it less expensive, it's doable.
