They're a good team BECAUSE their schedule sucks
What these rankings say is, if SFA played BYU's schedule their ranking would be the same as it is now but with a much different record. Pomeroy adjusts for schedule so SFA's rating is not low because of its schedule. The rating would be the same no matter what the schedule is according to the formula.
