That looks like a great build to me.
At other price points, pcpartpicker has some great build guides at various price points:
For iRacing, CPU power is a bit more important than GPU power, because it emphasizes realism of the simulation over graphical fidelity. But, with a good GPU you give yourself the option of using a VR headset instead of a monitor mount on the cockpit, which is the way I run things and is really fun.
