For a first trip I'd go somewhere you're familiar with
My wife did her first backpacking trip last summer around Mount Rainier. I said we wouldn't see a bear and, of course, ran into a mother and her cub on the first day. Somehow she finished all 93 miles of the trail in 11 days. And my wife likes to dress up, had her nails done, etc while on the trail. For some reason she likes putting up the tent, getting out the sleeping bags, etc. Mount Rainier was good because we had to camp in approved backcountry camping sites that all had pit toilets and other campers nearby. I would highly suggest doing something where other people will be around (unless she's okay with solitude).
