Not a cop, but I always refer to them as "officer" during depositions.
Of course, I'm usually taking Highway Patrol or Metro cops, so they may actually go by officer. I've only been corrected once, and that was because he'd moved from active duty to the academy and asked that I refer to him as "instructor".
