I completely agree, but that’s the point, isn’t it?

With pizza and sex, even when it’s bad, it’s still pretty good.
With brisket? When it’s great, it is truly amazing... but 80% of the time it’s crap. And mediocre brisket is worse than mediocre pulled pork or chicken or hot links.
Bad brisket is so dry and miserable it’s inedible.

I’ve tried a lot of Brisket, some of it has been pretty good , but it would never be my first choice.

Use prime full brisket, trim fat 1/4 inch or so everywhere
