Brisket is really hard to master
And there are a lot of variables that make it tough for your backyard pit master to get right.

I did one last week that was garbage. It was nothing I did wrong, but the brisket didn’t have enough fat to render and it came out dry. Pull test was perfect but it wasn’t good.

There’s not a better bbq meat when it’s done right. But I can understand why people might think it’s overrated.
