I have done variations of the 2:2:1, done then without wrapping, used different temps, used different rubs, etc.

I guess I’ve probably smoked ribs 40ish times over the last 8 years. I just did Malcolm Reed’s method this weekend and they were the best ribs I have ever done, hands down. I don’t think I’ll be switching or trying anything else for a while. They were competition quality.
