Do more than spatchcock it. Just quarter it and smoke it. Then you can pull the
Dark meat off when it reaches temp and the breasts when they get to 159. Don’t allow the breasts to go over 159 ESPECIALLY on a big bird like that. I’m not a fan of turkeys over 15-16. Way better taste and easier smoking 2 15 lbers
